Gluten-free Thumbprint Cookies (grain-free, dairy-free)

These gluten-free thumbprint cookies are also grain-free and dairy-free! They have a fantastic texture and can be adapted to use different zests, extracts and jams.

I love gluten-free cookies like these year-round. I don’t understand why raspberry thumbprints are a Christmas thing. I mean, they’re raspberry flavored!

To me, that screams summer. So here’s a little piece of summer for you in December.

These gluten-free thumbprint cookies are also grain-free and dairy-free! Can be adapted to use different zests, extracts and jams.

Use whatever flavors you’d like

I first made these cookies in January when I was experiencing the post-Christmas winter blues. So of course I loaded them with lemon zest and extract. Lemon does a great job of cheering me up.

With Christmas around the corner, I thought I ought to try an almond version and they were just as delicious.

Or maybe even more delicious?! It’s hard to pick a favorite.

You can of course use whatever extract and jam you’d like. Some commenters have used apricot jam and I think that sounds amazing in combination with almond extract. Blueberry jam would also be great!

A less fussy dough

The dough in these raspberry thumbprint cookies is almost the same as the one in my lemon curd thumbprints. Except I made these dairy-free!

To do that, I just used coconut oil instead of butter and reduced the amount by a tablespoon. The two types of fat are often not interchangeable in cookie recipes.

And the raspberry version is actually a little less fussy! For whatever reason, you have to pre-bake the lemon curd cookies a little before adding the curd.

They came out looking funky when I made the indentation, added the lemon curd and then baked.

These raspberry thumbprints get rid of that pre-baking step. It’s not much but I’ll take one less step as an improvement!

How to decorate thumbprint cookies

I think a powdered sugar glaze is pretty standard with thumbprint cookies but I know most of my regular readers don’t like it when I use powdered sugar (neither do I) so I just used some melted white chocolate. It’s also full of white sugar so it’s not really any better, but at least it tastes like something other than pure sugar.

I think these gluten-free thumbprint cookies are quite pretty without the white chocolate on top so you can easily leave it out. That means less washing up, which is always good. ;) If you want to use white chocolate and need these cookies to be dairy-free, you can make your own dairy-free white chocolate.

Using different types of sugar?

I used a light-colored raw sugar in the cookie dough and recommend thinking twice before using a dark raw sugar or coconut sugar. You don’t want the molasses-y taste to interfere with the light almond taste!

Gluten-free Thumbprint Cookies (grain-free, dairy-free)

Ingredients

  • 2 cups (200 grams) blanched almond flour (called ground almonds in other countries)
  • 1/4 cup (34 grams) coconut flour, sifted if lumpy
  • 1/2 cup (100 grams) raw or granulated sugar
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 7 tablespoons (98 grams) coconut oil 1 or 1/2 cup (113 grams) butter if you can have dairy, melted and cooled slightly
  • 1 large egg, room temperature
  • 1 teaspoon almond extract
  • 1/3 cup (100 grams) raspberry jam or jam of choice
  • 1/2 cup (85 grams) white chocolate for piping, optional (omit for dairy-free)

Directions

  1. In a medium bowl, stir together the almond flour, coconut flour, sugar, baking powder and salt.
  2. In another medium bowl, stir together the coconut oil, egg and almond extract.
  3. Add the flour mixture to the wet mixture and stir just until combined. The dough will feel quite wet. Let sit for 10 minutes, which allows the coconut flour to absorb the liquid.
  4. Preheat the oven to 350 °F (175 °C) and line a cookie sheet with a piece of parchment paper.
  5. Roll the dough into 1" balls and place 2" apart on the prepared cookie sheet. The dough will feel quite greasy but this is okay.
  6. Using your thumb, make an indentation about 3/4 of the way down into each cookie. You may want to re-form the edges a little to make them prettier.
  7. Fill each indentation with 1/2 teaspoon of jam. Be sure not to overfill them.
  8. Bake for 8 minutes or until the cookies have barely started browning on the bottom.
  9. Let the cookies, which will be very soft, cool for 5 minutes on the baking sheet and then remove to a wire rack to cool completely.
  10. Pipe with white chocolate, if desired.
  11. Store in an airtight container for up to 4 days.

Notes

  1. If you use unrefined coconut oil, these will likely have a coconut taste to them. With refined coconut oil, there will be no coconut taste.

    Cookies came out great! But just wondering, why do they need to be refrigerated? I dusted them with powder sugar (they look so pretty), instead of piping them with frosting & I don’t want the powder sugar to disappear, as it probably would in the fridge. Please advise. . .

    I’ve been gluten free for 9 years. Rarely do I bake a gf recipe that I really like. These cookies… LOVE! The texture is amazing, the hint of almond is perfection! This recipe is a keeper!

      Did you make any changes at all to the recipe (slightly different ingredients, a different sized egg, changing the order of mixing, etc.)? What brand of almond flour did you use?

      I haven’t tried it but I wouldn’t recommend it. I’d suggest sticking to something solid – so either coconut oil or butter.

    Hi! My sister in law is GF and dairy free. My father in law is diabetic and on a low-carb, sugar free diet. I am trying to make this recipe work for both by using Swerve (sugar substitute). Is this recipe considered keto, or low carb, friendly?

      Hello! If you replaced the sugar and used sugar-free jam, then it would be keto. :) I have no idea if Swerve would work here, though. My stomach doesn’t like it so I don’t have much experience with it. Sorry I can’t be more helpful!

    Saw the comment on using honey in place of raw or granulated sugar – do the same comments apply? Was going to try it since my stepdaughter is sugar free as well as all the rest…..Thanks. I want to surprise her with these since I have made these with butter, sugar and wheat flour for years and are a family favorite. She thought she would never be able to have these types of cookies again. Hoping this great recipe will do the trick!

I’m not sure what you mean with “do the same comments apply.” I searched the post for honey and found one person asking if they can use it and I wrote, “The problem is that there’s no liquid to reduce in the recipe, which is necessary because of the liquid you’re adding from the honey. So I can’t really recommend it. Sorry about that!” I’ve been working on a vegan version of this recipe for a while. It uses maple syrup. I hope to get it done soon because I also don’t like that these use granulated sugar! I hope you can find another recipe for your stepdaughter in the meantime. :)

    Wow! These are so good! I made with vanilla instead of almond extract and added chopped pecans to the dough. Strawberry preserves is what I had, so I drizzled with bittersweet dairy free chocolate. Amazing! Thank you for a wonderful recipe!

    I made these this past weekend and they are delicious and pretty! I am experimenting and trying to find good recipes that I can make for my gluten-sensitive MIL. Even hubby liked them, and he usually turns up his nose at gluten-free anything. Reforming the edges after you press an indentation for the jam is a little challenging, but doable. Patience is the key here. I like Shannon’s idea above about chilling the dough before shaping them – I will try that next time. I used almond bark for the drizzle this time, but I think the white chocolate would add a better taste dimension – I will try that next time as well.

      I’m so sorry for just now seeing your question! Peppermint extract sounds great. It might go well with your jelly if it’s also peppermint. Sometimes mint-flavored things are really spearmint but spearmint apple jelly sounds really odd. Sorry again for my slow reply!

    What brand of Blanched Almond Flour do you use? Do I get super fine? Or is all Blanched Almond Flour super fine? Either way I need the exact kind you use lol.

    Do you have a recommendation for an egg replacement for these? I typically use flax egg but I was curious if you have a different recommendation.

      One of the commenters used aquafaba but I haven’t tried it. I’ve never tried an egg replacement in these so I’m really not sure. They might be a bit more difficult to shape! Sorry I don’t have a better answer for you. :(

        I just made them using Bob’s Red Mill Egg Replacer…and they turned out great! I also used ghee instead of coconut oil and arrowroot flour instead of the coconut flour. The texture was superb; nice and soft and chewy…and they held their shape beautifully…and,of course the taste is a winner! 😊

    My family could not stop eating these cookies, they only lasted one day!! I made them without the chocolate since I am not able to eat chocolate. My dad could not believe they were gluten and dairy free. Great recipe – thank you for sharing.
