Hey – I finally made something vegan! I know I have quite a few vegan readers but I really struggle with the egg thing. Flax eggs just aren’t as nice as the real thing or at least they haven’t been in the recipes I’ve tried.
But that’s why this recipe is so great. There’s no flax egg and nothing funky going on. Just wholesome real ingredients (not that flax eggs aren’t wholesome or real)! I saw Ashley @ Baker by Nature’s cinnamon sugar doughnut muffins a few weeks ago and instantly had to make them. And I’m so glad I did!
I changed the recipe a little (you know how I am… less sugar and all whole wheat) and accidentally de-veganized them. So if you need them vegan, make sure you read the note about not dipping them in butter post-baking.
I posted these awesome little vegan donut muffins over on Java Cupcake today. Betsy’s husband just returned from his third deployment (this time in Afghanistan) so she has way better things to do than blog. So I’m stepping in the for the day!
It’s not very often I have the chance to meet another food blogger but I got to meet Betsy in January when she was up here in Berlin. We made these raspberry cheesecake brownies, which were pretty epic, and I can’t wait to go down to Bavaria to visit soon time soon and bake some more. :)

Is the white whole wheat another thing that you get from the States? I checked your ingredients page and didn’t see anything listed for here in Germany. I checked at just a couple of Bio stores but haven’t found it yet. Any suggestions?
They don’t have white whole wheat here. :( There was some discussion in the comments on the ingredients page about white whole wheat and I found some sources saying 1050 and some said 1600 but I went and bought both and neither one is the same. 1600 is especially weird. It turns stuff grey and it needs way more liquid than American white whole wheat. So frustrating! 1050 is a much better alternative and way easier to find (Kaufland has it) but it’s not really whole grain (and neither is 1600). The higher the number, the closer to whole grain it is. But anything that’s truly a whole grain is labelled as Vollkorn. Anyway. For this recipe, I’d recommend whole spelt. You’ll probably be able to taste a little whole graininess but not as bad as if you made them with regular whole wheat.

Erin, I wondered if you were familiar with Earth Balance vegan butter?? It’s really amazing! We use the non soy option and have been using this product for years now. ;)
I’m not familiar with it (because I normally use regular butter ;)) but I bet that’d be better than the coconut oil vegan alternative I listed in the recipe! Thanks a bunch. :)
